Curried Rice with Cranberries

One of the greatest pleasures for me in cooking is when I can create something with what I have on hand as well as being able to use something grown from our garden. We loved this dish!  I made it today with items I had on hand.

Curried Brown Rice with Cranberries

Recipe:

1 Cup Organic brown basmati rice (prepare per directions)

3 green onions, chopped

1/4 C sliced almonds

1/2 C dried sweetened cranberries

2 lg garlic cloves minced

2 tbl fresh cilantro chopped

1/2 C+ as needed organic vegetable broth

1/2 tsp red pepper flakes

1 tsp Garam Marsala

2 tsp Curry Powder

salt & pepper to taste  * you can adjust all the spices to what you like *

Heat olive oil in a large saute pan on medium heat, add onions, red pepper flakes, almonds, garlic & cranberries.  Heat for 2 minutes, stirring.  Add the vegetable broth, add the spices, mix through.  Add the pre-cooked rice, mix through, add the cilantro, mix and serve…Easy, fast, healthy and delicious!
